While cooking pork chops last night and amidst a pork chop flip I came to a sudden realization… why am I not recording this?! Or at the very least taking snapshots!
Pork Chops – seasoned with island style spices and calorie free barbecue sauce. Spiced side down, I grilled the chops for 8 minutes on low on an outdoor gas burning grill and seared the other side for 3 minutes.
Rice – I went cheap and lazy here using Uncle Ben’s Minute Brown Rice. I threw in some diced onions, salt, and pepper for flavor while it cooked.
Berry Desert – a simple bowl of blackberries and blueberries with low-fat whipped cream, with a sprinkle of cinnamon on the cream.
All in all, I thought this was a satisfying meal. My belly, fully satisfied but not feeling bloated was exactly what I was aiming for. The pork came out better tasting than I thought, and definitely better that it photographed.
