Bacon-Wrapped Goat Cheese Stuffed Dates

These delicious stuffed dates wrapped in bacon are always a party pleaser. Considering that they take only about 35 min from start to finish, they’re ideal for last minute situations. All too often you’re ready to go to a friend’s party and think, OMG wasn’t I supposed to bring something? These delicious Rumaki-style appetizers are perfect for this occasion. If you don’t have the time to stuff them, just skip the goat cheese, however, the stuffing definitely adds to the flavor!

Bacon-Wrapped Goat Cheese Stuffed Dates (serves 8)

  • 24 pitted dates
  • 12 slices of bacon
  • Brown sugar
  • Goat cheese
  • Toothpicks

Preheat oven to 375 degrees. Prepare pan with foil. No need to coat foil as the bacon fat naturally greases the pan while cooking. Take about a dime size ball of goat cheese and stuff into dates. Dates should already have an opening since they are pitted, but if needed, slice the date almost in half and stuff it – leave the date in one piece. Roll dates in generous amounts of brown sugar. Take all bacon slices and cut in half – each half-slice will roll one date. Roll the dates in bacon. Secure with toothpicks and arrange on pan. Bake for 20 minutes. Baking longer will yield crispier bacon if desired. Be sure to let cool as these are piping hot straight from the oven!
